Red Velvet Party Cake

INGREDIENTS

  • 2 1/2 cups (250 grams) sifted cake flour
  • 1/2 teaspoon salt
  • 2 tablespoons (15 grams) Dutch-processed cocoa powder
  • 1/2 cup (113 grams) unsalted butter, at room temperature
  • 1 1/2 cups (300 grams) granulated white sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup (240 ml) buttermilk
  • 2 tablespoons liquid red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon baking soda
Cream Cheese Frosting:
  • 1 1/2 (360 ml) cups heavy whipping cream
  • 1 - 8 ounce (227 grams) cream cheese, room temperature
  • 1 - 8 ounce (227 grams) tub of Mascarpone cheese, room temperature
  • 3/4 teaspoon pure vanilla extract
  • 1 cup (115 grams) confectioners' (icing or powdered) sugar, sifted
INSTRUCTIONS

Red Velvet Cake: Preheat oven to 350 degrees F (175 degrees C) and place rack in center of oven. Butter two - 9 inch (23 cm) round cake pans and line the bottoms of the pans with parchment paper. Set aside.
In a mixing bowl sift together the flour, salt, and cocoa powder. Set aside.
In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.

In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk, in three additions, beginning and ending with the flour.

In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.

Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 25 - 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Once the cakes have completely cooled, wrap in plastic and place the cake layers in the freezer for at least an hour. (This is done to make filling and frosting the cakes easier.)

Cream Cheese Frosting: In your food processor, or with a hand mixer, process the cream cheese and mascarpone cheese until smooth. Add the vanilla and confectioners sugar and process until smooth. Transfer this mixture to a large mixing bowl.

Then, in the bowl of your electric mixer, or with a hand mixer, whip the cream until stiff peaks form. With a large spatula, gently but quickly fold a little of the whipped cream into the cream cheese mixture to lighten it. Then fold in the remaining whipped cream, in two stages. If the frosting is not thick enough to spread, cover and place in the refrigerator for an hour, or until it is firm enough to spread.

Assemble: With a serrated knife, cut each cake layer in half, horizontally. You will now have four cake layers. Place one of the cake layers, top of the cake facing down, onto your serving platter. Spread the cake layer with a layer of frosting. Place another layer of cake on top of the frosting and continue to frost and stack the cake layers. Frost the top and sides of the cake. Can garnish the cake with sweetened or unsweetened coconut. Makes one - 9 inch (23 cm) four layer cake. The pool party cake recipe is ready to serve....enjoy the party !

Ingredients:

* 1 package (85 grams, 3 ounces) blue gelatin (JELL-O makes a blue raspberry one)
* 13 x 9-inch white cake
* 2 cups fluffy white icing
* Decorations:
* 44 multi-colored cream-filled wafters (strawberry, chocolate, vanilla)
* 1 piece (7 inches/18 cm long) red and green shoestring licorice
* pink chocolate rounds
* multicolored sprinkles
* chocolate finger cookies
* doughnut-shaped jelly candies
* gumballs

INSTRUCTIONS
Cover bottom and sides of 13" X 9" cake pan with plastic wrap. Make Jell-O as per instructions but use only 3/4 cup cold water; pour into prepared pan. Refrigerate, uncovered, for 1 hour or until completely set.

Meanwhile, cut cake into kidney shape; place on cake board. With spoon, hollow out 1/2 inch from top of cake, leaving 3/4 inch thick walls as border. Freeze cake scraps for other use.

With palette knife, spread icing over sides and border of cake. Trim wafers to match height of cake. Alternating colors, press wafers onto side of cake for fence, leaving 2 inch space uncovered for ladder.

With spatula, pick up long slabs of blue Jell-O, arrange in hollowed-out center of cake, rippling to resemble waves.

Cut red piece of licorice in half; arrange both halves on space on side of cake for ladder edges, pressing ends into cake to secure. Cut green licorice into small pieces for ladder steps; secure in place with icing. At opposite end from ladder, press wafer in place for diving board. At pool-side, arrange pink chocolate rounds and multi-colored sprinkles for landscape. Arrange chocolate finger cookies for wooden planking. Just before serving, place toy people or gummy bears in doughnut shaped candy for swimmers in rafts. Add gum balls for beach balls. The swimming pool party cake is ready...enjoy the party !

Ingredients for
* 1 cup sugar
* 1 cup butter
* 3 egg yolks
* 2 cups flour
* 2 teaspoons baking powder
* 2 tablespoons pineapple juice

Instructions

1. No. 2 Recipe, Cream the butter and the sugar, add the well-beaten yolks and the flour sifted with baking powder.
2. Add the flavoring, and bake in three jelly cake tins.
3. Two tablespoons of water and 1/4 teaspoon mace with 1/2 teaspoon vanilla may be substituted for the pineapple juice.
4. Filling.
5. Boil 2 cups sugar with 2/3 cup cream for ten minutes.
6. Take from the fire and beat till thick and smooth.
7. To 1/3 of this add 1 cup grated pineapple to spread between the layers.
8. To the remaining 2/3 add enough pineapple juice to make it spread smoothly for an icing.

* 6 tablespoons sugar
* 3 tablespoons vegetable shortening
* 3 eggs
* ¼ teaspoon salt
* 1 teaspoon baking powder
* 12 tablespoons flour
* Grated rind 1 lemon
* For Lemon Filling
* 4 tablespoons vegetable shortening
* 2 lemons
* ¾ cup sugar
* 4 yolks of eggs
* 1 white of egg
* ¼ teaspoon salt

Instructions

1. For cake.
2. Put the eggs, sugar, and lemon rind into basin, stand it over pan of boiling water, and beat until warm; then remove from hot water, and continue beating until mixture is stiff and cold; then add flour mixed with baking powder and salt, and pass through sieve, add vegetable shortening melted but cool, taking care to stir very gently, but on no account beat it.
3. Divide mixture into two small vegetable shorteninged and floured layer cake tins, and bake ten minutes in moderately hot oven.
4. Turn out and cool, then put together with lemon filling.
5. For filling.
6. Beat up eggs in saucepan, add vegetable shortening, salt, grated rinds and strained lemon juice.
7. Stir with wooden spoon over gentle heat until mixture just comes to boiling point.
8. When cold use.
9. Sufficient for one layer cake.

Ingredients
* ¼ pound butter
* ¼ pound bread crumbs
* 2 pounds black cherries
* 2 ounces almonds
* Cinnamon, cloves
* 2 ounces sugar
* ¼ pint of milk

Instructions

1. Pick, and stone the cherries.
2. Make the milk hot, and melt the butter in it.
3. Blanch the almonds, and put them through a nut mill, and pound them well in a mortar.
4. Now mix the almonds with the bread crumbs, sugar and a pinch each of cloves and cinnamon.
5. Pour over the milk, and also melted butter, mix again carefully, and add the cherries.
6. Bake in a shallow tin in a moderate oven for an hour.
7. The cake should be about an inch and a half thick.
8. Serve with whipped cream.

Ingredients

* 3 eggs
* 1/3 cup hot water
* 1 cup sugar
* 1¾ cups pastry flour
* 1½ cups fresh blueberries sprinkled with flour

Instructions

1. Break the eggs into a mixing bowl, add the salt.
2. Set the bowl in a pan of boiling water.
3. Beat the eggs with a Dover egg beater till light.
4. Then add one-third cup of boiling water.
5. Beat again till light.
6. Then add a little of the sugar, and beat.
7. Then add a little more sugar, and beat.
8. Continue adding a little sugar and beating till all the sugar is beaten in and the batter is very stiff and light.
9. Remove the bowl from the water.
10. Beat in the flavoring, then with a flat wire whip, called a "sensible egg whip," fold in the flour carefully and with as few strokes as possible, not sifting all the flour onto the batter at once, but sifting on a little flour and folding it in with two or three strokes, then sifting on a little more flour, and folding again.
11. Continue till all the flour is folded in, then fold in the blueberries.
12. Pour the batter into the tin, which has a piece of oiled paper fitted into the bottom, and bake in a moderate oven till a broom straw stuck into the cake comes out clean.
13. When the cake is removed from the oven, turn it bottom side up to cool in the tin, placing something under one edge of the tin to allow the air to circulate under it.
14. This will keep the cake from falling.
15. When cold, cut around the edge and remove it from the tin.
